Spring is the best time of year to go on vacation. It’s starting to warm up a little bit here in Pittsburgh, but it’s not quite warm yet. Then you go somewhere tropical, and it seems like you bring the warm weather back with you. Okay, we didn’t say that…Chef Mike at Revel + Roost did. But we totally agree with him!

If you’re like us, you probably think eating the local dishes is one of the best ways to explore a new city. If you’re also like us, you might not have a trip planned for this spring. Luckily, Roost, the second floor experience at the Market Square restaurant has us covered with their #Foodtripping menu.

Starting last Fall, Roost decided they wanted to celebrate its regional American menu inspiration by taking us on a journey around the states without ever leaving Pittsburgh. They’re creating rotating menus that focus on different cities in the US, making traditional dishes with a modern twist. You know, things like a lobster clam boil to celebrate New England, or BBQ spare ribs for Kansas City.

This month, Roost is #Foodtripping to Key West, and trust us, you’ll want to check out the menu. Especially if you love seafood.

The first dish that will transport you is an Oyster and Shrimp Duo. It’s a modern take on two classics, shrimp cocktail and oysters on the half shell. Roost is swapping boring cocktail sauce with carrot, ginger, and turmeric, and they’re adding in a citrus mignonette because why not amp up the flavor?

Stone Crab Maki is the second dish on our food journey to Key West. The sushi rolls include papaya, arugula, cilantro, and shishito peppers. Chef Mike put a fun Pittsburgh spin on the maki by using black and gold tabiko, which we love.

Seared Grouper rounds out the trio. You can expect pan-seared grouper with Rosigold mango habanero glaze, charred asparagus finished with toasted coconut, and toasted coconut and sesame rice. We’re definitely not obsessed with the rice…ahem.

The hardest part is making a decision on which one to try first! But if you can’t decide, Roost offers a 3-course tasting menu of all three for just $45.

And, let’s be honest, #Foodtripping is nothing without cocktails. Roost thought so too, and they’re making tropical sangria and Key West margaritas to pair with your meal. Don’t you just feel the sunshine and breeze off the ocean thinking about it?
